Em Fevereiro de 2026 fui convidado para uma matança do porco realizada pelo Restaurante Páteo Real, em Alter do Chão.

A matança do porco em Portugal é uma tradição secular, realizada no inverno para autoconsumo familiar, servindo para prover carne e enchidos (chouriços, morcelas, presuntos) para o ano inteiro. Mais do que o abate, é uma evento social de vizinhança e família que envolve a transformação total do animal, frequentemente acompanhado de convívio e refeições comunitárias, especialmente no Norte e Alentejo.

More than just the act of slaughtering, it is a social celebration of family and neighbors, involving the complete use and transformation of the animal, often accompanied by gatherings and communal meals, especially in the North and Alentejo regions.
